I was wondering. In my messenger under Items sent why don't any of the sent or replied to messages show?

Because every message you receive/send goes to your allowed maximum count, not every message is placed in your sent folder unless you click the "Add a copy of this message to my sent items folder " tick box.

Ahh. Very intresting. I always wondered that. Is there a way to set it so it automatically saves sent messages or do you have to click the box before you send?

Yeah, click that box before you send. Just be aware that you will hit you maximum messages real quick.
